Seared Scallops on a Bed of Shredded Brussels Sprouts

Emotional wellness is about feeling and being in touch with your emotions. It is also about managing your emotions so that your life doesn’t fall apart each time something doesn’t go your way. It involves controlling your reactions when disaster strikes and learning that your response is a choice you make but one that takes time to develop.

I want to bring up the unconditional love we have for our children. For me, being a teenage parent from the onset, unconditional love was not even conceivable. When you’re young, it's all about you, and the thought of sharing your love was just like I said - inconceivable. However, there is something so rewarding about becoming a mom, and no matter how much advice you’re given beforehand, you cannot prepare for it.
I am so thankful to God for blessing me with my son, Anthony. Because of him, I have grown more patient and better understand the meaning of unconditional love. Plus, I have become a master at multitasking and taking five minute showers!!

There’s no denying it; after giving birth, your priorities change. Life with a new born is worlds away from the child-free life. And life with a teenager, well, it's once again inconceivable. The person you were then is not who you are now. The unavoidable fact is that pregnancy, birth, and motherhood will change you profoundly and hopefully, like in my case, for the better!
Recipe of the Day: Seared Scallops on a Bed of Shredded Brussels Sprouts

INGREDIENTS
- 1 lb Sea Scallops 
- 1 lb Shredded Brussels Sprouts 
- 1 Lemon (juiced) 
- 3 Tbsp of Olive Oil 
- 1/4 Cup Chopped Green Onion 
- 2 Smoked Applewood Bacon Strips, cooked and chopped 
- 3 Cloves of Chopped Garlic 
INSTRUCTIONS
- Heat two tablespoons of olive oil and cook garlic on high heat. 
- Once garlic is browned, add brussels sprouts and green onions 
- Once the brussels sprouts are nicely browned, transfer to a plate and set aside. 
- Add 1 tablespoon of olive oil and place on high heat to sear the sea scallops (about 3-4 minutes on each side, with salt and pepper both sides as you like) 
- Top the brussels sprouts with the seared scallops and sprinkle the chopped applewood smoked bacon. Enjoy!
