Mexican Corvina with Spanish Cauliflower Rice

It's definitely nice to have a night out at a fine dining restaurant. But why not create your own fine dining experience? It's more intimate, and the best part is that you don't need to leave the comfort of your home. One of the perks of going out for dinner is that you aren't in a rush to finish. By creating a similar restaurant environment at home, you can adopt the same philosophy and emulate this feeling.


Once per week, I try to make a new ethnic dish. I set the mood with coordinating music, candles and wine. This particular evening was Mexican style, so I played Mexican traditional music. Remember, dating your spouse lets them know that they are a priority to you. Planning a special dinner at home tells them they are still special to you. Just the thought that you took the time to plan a night-in provides a sense of love for one another. Next time you plan an at-home dinner date, try to make it fun by creating a restaurant-like environment. Buen Provecho!

Mexican Corvina


INGREDIENTS

  • 1 pound of Corvina fish fillets

  • Vegetable non-stick cooking spray

  • ½ cup salsa

  • ½ tsp black pepper

  • 2 Tbsp mayonnaise

  • 1 tsp lime juice

  • ½ cup Monterey pepper jack shredded cheese

INSTRUCTIONS


Coat baking dish with vegetable spray. Mix remaining ingredients and spread evenly over the fish. Bake at 400 for 10 to 15 minutes until flesh is opaque and separates easily with a fork.


Spanish Cauliflower Rice

INGREDIENTS

  • 1 head of cauliflower chopped in food processor

  • Olive oil

  • 2 cloves garlic

  • 1 green pepper

  • 1 onion

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp oregano

  • Salt and pepper to taste

  • 2 tbs. hunts tomato paste mixed in 2 tbs water

INSTRUCTIONS


Sautee the cauliflower in olive oil until tender. Add in your garlic, onions and pepper until softened. Toss in your spices and add your tomato paste mixture. Continue to stir adding in olive oil as needed. Salt and peeper to taste and toss in your cilantro.
