This recipe is inpired by the Intellectual dimension of wellness.

Intellectual wellness is about learning and maximizing your cognitive abilities. The learning process includes five basic steps: readiness, stimulus, discovery, response, and application. Intellectual wellness depends on a daily habit of feeding your brain with material that expands your knowledge and world view in addition to challenging and engaging your higher level thinking skills.

As a small child, I struggled in school, and these feelings of struggling through life carried into adulthood. No matter how hard I tried, it seemed that organization was a constant problem. However, when I felt hopeless at times, it seemed cooking was a constant practice for self care. As I got older, I discovered (although never diagnosed) that I may have been suffering with ADHD.

I berated myself for my lack of organization but just recently discovered that cooking brings me extreme joy. It gives me the opportunity to recognize something I am good at while stretching my creativity. Choosing the ingredients and the process of organizing and chopping vegetables has brought a great sense of calm into my life. It’s given me the opportunity to focus while following directions in a recipe and has helped nurture me like an encouraging parent. As I’ve learned to better understand myself, I now know I can walk into any kitchen, take a look in the fridge and think, I’ve got this!

This recipe grabbed my attention. Attached is a video from Gordon Ramsay where I got the recipe.
