This recipe is inspired by the Nutritional dimension of wellness.
Nutritional wellness is about eating foods that are high quality and lower in calories. It’s important to eat foods that are enjoyable and healthy at the same time as it allows you to have a better relationship with food. The key to this dimension is to eat in a balanced manner without feeling deprived.
"To eat is a necessity, but to eat intelligently is an art." - Francois de La Rochetoucauid
For me, the act of cooking is a form of medicine. I love taking the time to chop, peel, and grate healthy ingredients packed with good health properties. Preparing and indulging in this delectable salmon is more therapeutic than one may realize. While I prepare the fish, I think about the nourishment it provides my body; Salmon is rich in omega-3 fatty acids and vitamin B, and is a great source of protein. So, if you try this dish, try to be mindful of the process in preparing it - think about how it nourishes your body. Bon Appétit!
Recipe of the Day: Lemon Butter Salmon

INGREDIENTS
1 1/4 lb skinless, boneless salmon filets cut into 4 filets, 5 oz each and about 1" thick
1/2 tsp salt
1/8 tsp black pepper
4 Tbsp unsalted butter
1 tsp grated lemon zest
4 Tbsp freshly squeezed lemon juice from 2 lemons
1 Tbsp fresh parsley
INSTRUCTIONS
Season salmon on both sides with 1/2 tsp salt and 1/8 tsp black pepper.
Grate 1 tsp of lemon zest, then squeeze 2 lemons for 4 Tbsp of lemon juice. Set aside.
Heat a large (10-12") light colored pan over medium heat and immediately add 4 Tbsp of butter, stirring frequently to prevent splatter until it begins to turn light brown. This should take between 3-7 minutes depending on your heat.
Add seasoned salmon and cook uncovered on the first side until golden brown (approx. 3-4 minutes). Flip salmon and cook an additional 2-3 minutes or until fully cooked through.
In the last 2 minutes of cooking, add 1 tsp lemon zest and 4 Tbsp lemon juice to the pan. Spoon the sauce over the salmon as it cooks.
Transfer salmon to plates and drizzle with remaining sauce. Sprinkle salmon with freshly chopped parsley and black pepper to taste.
Serve immediately and enjoy!
